Every bag of IRONFOLD carries its roast curve printed on the label — charge temp, first crack, development time. If we can't show you the curve, we don't sell you the coffee. We roast twice a week on a rebuilt 1987 Probat, in batches small enough to throw away when they're wrong. Last year we dumped 214 kilos. That number is on the wall.
